Strawberry Pie Bars

Craving for something sweet?? These strawberry pie bars are the best solution to end these cravings… pretty simple and yummy!! And for the parties, it can be the best option as well. Sometimes you are with family or friends and you are tired of making the same old cake or brownies for the dessert then these pie bars can be your savior. It is not necessary to use only strawberries you can use any fruit in hand.

 

The filling can be produced with any perfectly ripe and delicious fresh or frozen fruits. I’m sure your family will adore them just as much as we do! They were quite simple to make, and the first bite was so creamy and wonderful that I couldn’t stop eating them.

 

A very simple recipe but it will make everyone fall for it and that is the beauty of this dessert. I have tried it dozen times in my home and everyone around me has a special affiliation for this dessert. Whenever I hang out with my friends, they have a special request for these pie bars.. I have tried it in many flavors that’s what made it different every time otherwise it would be monotonous and everyone would have been bored of it. Strawberry pie bars

Ingredients

For Strawberry Filling:

  • 2 cups fresh or frozen strawberries
  • cup sugar
  • 1 tablespoon Lemon juice
  • cup water
  • 2 tablespoon cornstarch

For Cake: 

  • 1 cup Butter
  • 4 eggs at room temperature
  • tsp baking powder
  • 1¾   cup  sugar
  • 2 cups strawberry filling
  • 3 cups all-purpose flour
  • 1 tablespoon vanilla essence
  • ¼ tsp salt

For Glaze:

  • 1¼   cup icing sugar
  • 1 tablespoon vanilla extract
  • 2 tablespoon Milk

Instructions

For Strawberry Filling: 

  • In a saucepan add strawberries, sugar, and water and stir this mixture at medium heat as well as keep stirring so it doesn’t stick to the surface of the pan.
  • After fifteen minutes add lemon juice, it can be bottle one or fresh. Keep stirring!
  • Now add cornstarch to the water thus make sure it is not lumpy but smooth and consistent. Then add this starch water mixture is in the saucepan. Stir it on medium heat for further 5 minutes.
  •  After this the filling is ready.

For Cake:

  • Preheat oven to 180 degrees and Butter the loaf pan.
  • Now gently sprinkle the flour on the loaf pan and make sure it spreads evenly.    
  • For preparing the batter, add butter to a bowl with sugar gradually. Continue beating it for 2 minutes then add eggs, one at a time, beating after each addition to incorporate.
  • Add baking powder, salt, and vanilla essence. Afterward, mix it thoroughly.
  • Now, add flour and mix it while we get our thick final batter. Take out at least 1 cup of batter in a separate bowl for topping.
  • Then spread the batter on the loaf pan evenly and don’t worry about the thickness because the fruit filling will moisturize it!
  • Afterward spread the strawberry filling. On the top of the filling, spread the batter in the pattern of your own choice. With the help of a toothpick, you can any design. 
  • Bake it for like 35-40 minutes.
  • Take it out after the mentioned time and leave it outside.
  •  Then for the glaze, add sugar, vanilla extract in the bowl as well as milk. Keep adding milk until it has pouring consistency and lump-free.
  •  Then pipe it and adorn it to make it more appealing.
  •   Finally, your dessert is ready!

Notes

  • For strawberry filling make sure to stir continuously on medium flame to prevent sticking to the pan.
  • For making the batter the eggs you are using must be at room temperature and add them one by one.
  • It is necessary to preheat the oven and grease the loaf pan in a good way.
