Mutton Leg Roasted

We all love our traditional and cultural events. Eid is one of these events for which Muslims wait for the whole year. It is the day of blessings and happiness. We never forget to add the flavors of our traditional recipes in these events. Especially on Eid-ul-Azha, demands get higher for the variety of dishes like of mutton. So, “Mutton Leg Roasted” is super-moist and delicious recipe which is perfect for family dinners and Eid occasion.It’s an easy and a little time taking recipe, but that time is worthy for the taste it brings. Moreover, it is famous that the glory of Pakistani recipes comes by roasting the food well.

My family is meat lover. So, I decided to make this recipe on the 2nd day of Eid for the family dinner. So, that day along with all the other dishes, I cooked “Mutton Leg Roasted” and served this dish with gravy as a sauce in pot. Everyone loved the taste and creamy texture. That was a memorable day, well spent with happiness and good food. I hope that you all will also try this and make your lives happier and enjoyable!

 

MUTTON LEG ROAST

Especially on Eid-ul-Azha, demands get higher for the variety of dishes like of mutton. So, “Mutton Leg Roasted” is super-moist and delicious recipe which is perfect for family dinners and Eid occasion.

Ingredients

  • 3.5-4 kg mutton leg
  • 2 cups full fat yoghurt
  • 2 tablespoon salt
  • 2 tablespoon red chilli powder
  • 2 tablespoon garam masala
  • 3 tablespoon coriander powder
  • 3 tablespoon cumin powder
  • 5 tablespoon ginger paste
  • 1/2 cup vinegar
  • food colour
  • 1/2 cup oil
  • coriander leaves and lemon

Instructions

  • In a bowl, pour yoghurt and add all other marination ingredients. Then mix well. 
  • Once mixed well, add orange food color and mix. Set aside this mixture. 
  • Now for the preparation of the lamb leg, firstly make slight cuts on the whole leg. Then pour the mixture all over the leg in a way that it goes inside the cuts. Marinate 8-24 hours in the fridge. 
  • Now take a big Wok / Kara-hi and add some oil.
  • When oil is heated up, put the marinated lamb leg into it and fry from all sides for almost 10-15 minutes, 5minutes for each side. 
  • Once done, turn the flame to low heat. Add the leftover marination mixture all over the leg. 
  • Now cover the lid and cook for 2 hours on low heat.
  • After that, remove the cover, change the leg’s side, and cook for more 2 hours on low heat.
  • Once done, serve the roasted lamb leg with its gravy as a sauce or you make it dry as well. 
  • Now do the Charcoal smoke for 5minutes for amazing smoky flavor. Now it is ready to serve and enjoy.  

Notes

Here are some notes to help you throughout the recipe:
  • Lemon juice can be added instead of Vinegar.
  • If you like to make it spicy, then you can add more red chilli powder as well as more salt according to your taste.
  • There is no need to add meat tenderizer as a lot of vinegar is already added in the marination mixture which is a natural meat tenderizer.
  • While spreading the leftover marination, if you don’t have enough marination then you can add 1-2 cups of water to make it thin mixture.
