Mango Icecream

Summer brings the greatest gifts of delicious ice-creams and the epitome of taste mangoes. We all love to have these two to make our summers more exciting and pleasurable. But if we combine these, what we get is nothing less than a summer hit! It’s super easy to make at home. 

My younger son really enjoys the mango ice-cream that I make for him at home. Yesterday me and my son made this smooth, creamy and fluffy ice-cream together. It turned out very delicious and scoop able. The lemon-yellow color of the ice cream looks very appealing. The best thing about this recipe is that it just requires a few basic ingredients. I hope you all will try this simple yet delicate recipe to make your summers happier! 

Mango Icecream

Ingredients

  • 1 medium Mango
  • 4 tbsp Milk
  • 200 ml Fresh double milk
  • 200 gram Condensed Milk
  • 1 tbsp Vanilla essence

Instructions

  • Peel off the mango and then slice it.
  • Now take a blender, add the sliced mango and milk to help in blending mango.
  • After this take it out in a bowl and freeze it for 1 hour. 
  • Take a separate bowl and add fresh double cream. Beat the cream with a hand beater till soft peaks. Keep the speed slow
  • When the cream starts getting thick and having soft peaks, stop blending and add condensed milk and vanilla essence.
  • Again, start beating till thick peaks.  
  • Beat on slow speed, it will add more air to the ice-cream and the ice-cream will be lighter.
  • Once the thick peaks have formed, add the mango pulp and again beat it on slow speed.
  • Scrap the sides and freeze it for 1 hour in the same bowl.
  • Now take out the bowl from the freezer and beat again for few minutes.  
  • Scrap the sides and transfer it to the airtight container, tap it from few inches’ height so that all the air bubbles can break.
  • Freeze it for 3 hours. After 3 hours take out from freezer and mix it with spoon.  
  • Freeze it for 2 more hours or overnight before you can serve it.
  • Scoop out or cut into slices and enjoy!

Notes

Keep the speed of the beater slow because the lighter the speed, the airier the ice-cream.
If the ice-cream is too hard to serve, so before serving it keep in fridge for about 15 minutes.
It softens a bit and gives an amazing texture to the ice-cream.
